At the helm of this iconic restaurant is Chef Victor Martin. “I’ve been in this industry for almost 24 years, Chef Martin shares. “I worked my way up from washing dishes, learning every step of the process. When I was given the chance to lead Castelli’s, I was told, ‘Don’t change anything—just make it better.’ That’s been my mission every day.”

A Family Legacy Rooted in Tradition

“We brought Castelli’s Ristorante to the Coachella Valley in 1988, along with our original recipes,” says co-owner John Castelli. “These recipes, like Grandma’s, have remained unchanged, and that’s why they’re so special.”

John and Michael Castelli moved their family and restaurant from San Clemente to the desert, bringing with them the traditions of Italian dining. Castelli’s has since become renowned for its exceptional offerings, from prime beef, veal, lamb, and seafood to signature pasta dishes like their famed Fettuccine Alfredo.

A Commitment to Quality

Chef Martin’s passion for authentic Italian cuisine is reflected in Castelli’s signature dishes, from their award-winning prime beef to the veal chop, which he describes as “18 ounces of perfection.” “We don’t cut corners here,” Martin emphasizes. “Our standards are non-negotiable. I’d rather 86 a dish than serve something that doesn’t meet our quality.”

This dedication extends beyond the food to the restaurant’s impeccable service. “From the valet to the busser, we’re all about creating a seamless experience. We want every guest to feel like they’re coming home.”

The Celebrity Room: Dining with the Stars

One of Castelli’s most unique features is the “Celebrity Room,” where diners can enjoy their meals surrounded by photographs of Hollywood icons, athletes, and even presidents who’ve dined at the restaurant.

“This room was inspired by the high volume of celebrities who visited Castelli’s,” shares John Castelli. “We’ve hosted everyone from President Gerald Ford to Cheech Marin, Kurt Russell, and Jerry Lewis. President Ford’s visit was particularly memorable, with Secret Service ensuring everything was secure.”

The Celebrity Room not only tells a story of the restaurant’s esteemed patrons but also enhances the charm of dining at Castelli’s, offering a slice of Hollywood alongside their Italian fare.

At Castelli’s, every dish tells a story. One standout is the Pork Chops with Apple Glaze, described by John Castelli as “dinner and dessert in one dish.” Another is their Fettuccine Alfredo, a customer favorite that earned Castelli’s the nickname “The King of Fettuccine.”

For those craving something indulgent, the Filetto Marsala—a petite filet mignon topped with a Marsala wine and portobello mushroom sauce—is a must-try, as is the Veal Chop, an 18-ounce masterpiece of tender perfection.

Complementing the exquisite menu is an extensive wine list, curated to elevate the dining experience. Lead bartender John Conniff recommends a Barolo or Pinot Noir with the Veal Chop and a robust Cabernet Sauvignon with the Bistecca Aragosta.

Chef Martin reflects on what makes the restaurant special. “It’s a combination of passion, tradition, and unwavering standards. Michael (the founder) always said it takes years to earn a guest’s loyalty and seconds to lose it. We never forget that.”
